Baked Potato Soup by white plate blank slate

white or red potatoes, bacon, butter, flour, pepper, milk, chicken soup base or bouillon, scallions


– 1 1/2 pounds white or red potatoes, scrubbed (about 5 medium potatoes)
– 6 slices bacon, chopped
– 1/4 cup butter, or 3 tbsp. butter plus 1 tbsp. bacon fat
– 1/4 cup flour
– 1/4 tsp pepper
– 4 cups milk
– 1 tsp. chicken soup base or bouillon
– 1/2 cup grated medium or sharp cheddar
– 3 scallions, green parts only, thinly sliced
