Beef Burgundy by Gentleman at Home

bacon, eye of round beef roast, olive oil, yellow onion, mushrooms, carrot, garlic, dry red wine, beef stock, soy sauce, flour, sugar, dried thyme, dried oregano, unsalted butter, bay leaf, salt and pepper


– Five slices of bacon
– One 5-6 pound eye of round beef roast
– cut into cubes
– One tablespoon of olive oil
– One yellow onion (coarsely chopped)
– 16 ounces of mushrooms, sliced
– One carrot (peeled and coarsely chopped)
– Five garlic cloves (pressed)
– Two cups of dry red wine
– 3/4 cup of beef stock
– 1/4 cup of soy sauce
– 1/3 cup of flour
– Two teaspoons of sugar
– One tablespoon of dried thyme
– One tablespoon of dried oregano
– Two tablespoons of unsalted butter (cut in small pieces)
– Two bay leaves
– Salt and pepper (to taste)
