– 1 tbsp olive oil
– 1 cup onion, diced
– 4 garlic cloves, minced
– 2 lb beef chuck roast (cubed)
– 2 tbsp fresh rosemary, chopped
– 1 tsp kosher salt
– 1 tsp black pepper
– 2 cups beef broth
– 1/4 cup red wine
– 6 oz can tomato paste
– 15 oz can diced tomatoes (or 2 cups fresh tomatoes – chopped)
– 1/2 cup parmesan cheese (grated)
– pasta (boiled)
– zucchini noodles (sauteed)
– polenta (cooked)
– spaghetti squash (roasted)
