– 2 medium onions, diced
– 1 stalk celery, diced
– 1 carrot, peeled and diced
– 3 cloves garlic, minced or pressed through a garlic press
– 2 tablespoons tomato paste
– 8 ounces sliced mushrooms
– 1 teaspoon kosher salt
– 1/2 cup red wine
– 1 cup chicken stock (preferably homemade)
– 15 oz can diced tomatoes
– 2 sprigs fresh thyme (or 1 teaspoon dried thyme)
