– Salt and freshly ground pepper, to taste
– 3 Tbs. olive oil
– 1-1/2 cups red wine
– 1 large yellow or red onion, finely chopped
– 2 garlic cloves, crushed
– 2 carrots, peeled and cut into 1/2-inch pieces
– 2 celery stalks, cut into 1/2-inch pieces
– Optional: About 1/2 cup frozen peas or beans
