– 2 onions, finely chopped
– 6 cloves of garlic, crushed
– 1 stalk of celery, finely diced
– 2 medium carrots, finely diced
– 1 zucchini, finely diced
– 250 g/9 oz mushrooms
– 1.5 litres/6 cups of canned plum tomatoes, crushed up
– 1 cup/240 ml of passata
– 1 cup/240 ml of beef stock
– 4 tbs of tomato paste
– 2 tbs of mixed herbs
– handful of fresh chopped Italian parsley
– handful of fresh chopped basil
– 2 tbs of balsamic vinegar
– salt and black pepper to season
