Bourbon Butternut Chicken by Gourmet Done Skinny

chicken breasts, olive oil spray, sesame oil, butternut squash, kosher salt, pepper, onion, garlic, light soy sauce, khup, bourbon, apple cider vinegar, honey, brown sugar, cayenne pepper, red pepper flakes, cornstarch, ginger, green onions, toasted sesame seeds


– 2 pounds chicken breasts, cut into small bite-sized pieces
– olive oil spray
– 2 t.sesame oil
– 3 c. butternut squash cubed (about 1 small butternut squash or you can use frozen)
– 1/2 t. kosher salt or to taste
– dash of pepper or to taste
– 3/4 c. onion, finely chopped
– 3 cloves, garlic, minced
– 2/3 c. light soy sauce (use light soy sauce or the dish will be too salty)
– 1/4 c. ketchup
– 1/4 c. bourbon
– 2 T. apple cider vinegar or Shaohsing Wine if you have it
– 1/4 c. honey
– 1 T. brown sugar
– 1/8-1/4 cayenne pepper (depending on how you like it)
– 1/2 t. red pepper flakes
– 2 T. cornstarch
– 2 t. fresh ginger, minced
– 1 bunch green onions, finely chopped (for garnish if desired)
– toasted sesame seeds (for garnish if desired, pinch over each serving)
