– 1 medium onion, diced
– 1 clove garlic, crushed
– 1/2 teaspoon fine sea salt
– 3? to 4-pound butternut squash, peeled, seeded, and cut into a rough 1/2-inch dice
– 2 cups chicken broth, preferably homemade broth (or vegetable broth, or water)
– 1 teaspoon fine sea salt ( 1/2 teaspoon if using store-bought broth)
– 1 sprig fresh sage, rosemary, and thyme, tied together
– 2 tablespoons brown sugar
– 1/4 teaspoon fresh grated nutmeg (about 4 grates)Sour cream for garnish
