– 1 small onion, minced
– 1 large butternut squash (peeled and cubed into 1 inch cubes (about 4-5 cups or a 3 pound squash)
– 2 cloves garlic, minced
– 3 cups apple cider or apple juice (DO NOT USE APPLE CIDER VINEGAR!!!!)
– 2 cups vegetable broth
– 1 teaspoon cinnamon
– 1/2 teaspoon curry powder
– 1/4 teaspoon freshly grated nutmeg
– 1/2 teaspoon ginger root (grated)
– 1 teaspoon salt
– 1/2 teaspoon pepper
– 1/2 cupplain Greek yogurt (optional)
