– 150 g pancetta, cut into small dice (discard any skin)
– 150-200 g dried pasta – look for nests of spaghetti or linguine
– 3 medium-large eggs
– lots! of parmesan or pecorino cheese (about 1/4-1/2 cup’s worth feels right for two)
– 1/4 tsp freshly grated nutmeg
– 1/2 tsp freshly cracked black pepper
