Chicken and Dumplings by Chop Secrets

olive oil, chicken breasts, onion, garlic, chicken stock, dried thyme, celery, peas and carrots, cream of chicken soup, refrigerated biscuits, parsely

– 1 tbsp olive oil
– 2 lbs chicken breasts, cubed
– 1 small onion, finely chopped
– 2 cloves garlic, minced
– 3 cups low sodium chicken stock
– 1 tsp each dried thyme, dried rosemary, poultry seasoning, pepper
– 1 cup celery, chopped
– 2 cups frozen mixed peas and carrots
– 2 cans low sodium cream of chicken soup (10.5 oz)
– 1 16 oz can refrigerated buttermilk or southern style biscuits, each biscuit quartered
– Chopped parsley for garnish
