– 1 cup Onion, chopped
– 3 Garlic Cloves, minced
– 1 cup Potato, diced
– 2 Carrots, diced
– 1 C. Lentils
– 2 tbsp Tomato Paste
– 6 C. Organic Chicken Stock
– 2 Boneless Skinless Chicken Breasts, cooked & shredded
– 1/2 tsp Cumin
– Salt & Pepper to taste
– Serve with white rice, optional cilantro for garnish
