– 1 lb chicken breasts (skinless, boneless)
– 1 tbsp avocado oil
– 1 small onion, diced
– 4 cloves of garlic, minced
– 3 cups fat free chicken broth
– 15 oz can diced fire roasted tomatoes
– 10 oz can red enchilada sauce
– 15 oz can black beans (drained and rinsed)
– 2 cups frozen corn
– 1/2 cup cilantro, chopped
– 1 tbsp canned chipotles in adobo sauce, chopped
– 1 tbsp ground cumin
– Salt and pepper to taste
– Juice of 1 lime
