– 3/4 cup packed brown sugar
– 3/4 cup low sodium soy sauce
– 1/4 cup apple cider vinegar
– 2 tbsp ground ginger
– 2 tbsp garlic powder
– 1 tsp ground black pepper
– 1/4 tsp red pepper flakes
– 1 can crushed pineapple
– 1 cup low sodium chicken stock
– 3 lb boneless skinless chicken thighs (cut into bite size cubes)
– 2 tbsp cornstarch
– 2 tbsp cold water
– 2 cups long grain white rice (dry)
– 2 cups cold water
– 1 Pinch of salt
– 1/8 tsp of extra virgin olive oil
– Green onions for garnish (optional)
