– 1 large Onion, chopped
– 1 cup Celery, (diced (about 2 stalks)
– 1 cup Carrots, (diced (about 2 carrots)
– 2 Bay Leaves
– 1 Jalapeno, (seeded and diced)
– 5 cloves Garlic, (finelyminced)
– 1 (14.5 oz) can Fire Roasted Diced Tomatoes (with juice)
– 1 tbsp Cumin
– 2 tsp Chili Powder
– 1 tsp Coriander Powder
– 1 tsp Smoked Paprika
– 1 1/2 tsp Kosher Salt
– 1/2 tsp Pepper
– 1 tsp Mexican Oregano, (or regular)
– 1 (15 oz) can Black Beans, drained and rinsed
– 5 cups Chicken Broth (use 6 for a soupier consistency)
– 3 Boneless/Skinless Chicken Breasts
– 3 tbsp Tomato Paste
– 1 1/2 cups Frozen Corn
– 5 6 in Corn Tortillas, cut into 2 in pieces, (divided)
– Cilantro
– Sour Cream
– Tortilla Chips
– Corn Tortilla
– Avocado
– Shredded Cheese
