– 4 cups yellow potatoes with skins on, cut into 1/2 inch pieces
– 1 yellow onion, diced
– 2 carrots, peeled and chopped into 1/2 inch pieces
– 2 cups chicken bone broth (or turkey)
– 1.5 teaspoons dried thyme
– 1 teaspoon sea salt
– 1/2 teaspoon garlic powder
– 1/4 teaspoon freshly cracked black pepper
– 1 cup canned coconut milk
– 4 slices of bacon, cooked and chopped for garnish
– Green onions cut for garnish
