– Water or Fish Stock to mix with clam juice
– 5 slices uncooked bacon, chopped
– 3 tbsp butter
– 1 medium onion, diced
– 2 ribs celery, diced
– 1/4 tsp dried thyme
– 2 cloves garlic, minced
– 1 1/4 tsp kosher salt (more to taste)
– 1/4 tsp fine ground black pepper
– 1 1/2 lbs red potatoes (approximately 4 cups cut in 1 – 1 1/2 inch chunks)
– 1 1/3 cups half and half
– 1 1/2 tbsp corn starch or arrowroot powder (optional for thickening)
– 2 green onions (optional for garnish)
