– 1 tablespoon coconut oil
– 1 large onion, diced
– 1 stalk celery, diced
– 3 cloves garlic, minced
– Splash white wine (about 1/4 cup)
– 2 large carrots, diced
– 1 14-ounce can diced tomatoes
– 2 bay leaves
– 6-1/2 cups vegetable broth
– 1/4 teaspoon freshly cracked black pepper
– Leaves from 3 sprigs of thyme
– 1/4-1/2 teaspoon salt (more if using homemade broth, less if using store-bought broth with sodium), plus more to taste
– Garnish:minced parsley
