– 1 leek, cleaned, green parts removed, and sliced thin (or a medium onion)
– 1 carrot, peeled and diced
– 1/2 celery stalk, diced
– 1/2 teaspoon fine sea salt
– 2 cloves garlic, minced
– 2 teaspoon s?herbes de Provence? (or dried thyme)
– 6 cups water
– 1 teaspoon fine sea salt (plus more to taste)
– 1/2 teaspoon fresh ground black pepper
– Regular lentils: If you can?t find French green lentils, use regular (brown) lentils.
