– 3 sprigs fresh thyme or 1 teaspoon (1 g) dried thyme
– 3 (12 g) garlic cloves, minced
– 1 tablespoon (15 ml) regular soy sauce
– 1 tablespoon (15 ml) fish sauce
– 1 bay leaf
– 4 cups (1 L) unsalted high quality beef stock
– 4 cups (1 L) unsalted high quality chicken stock
