Green Chili and Potato Stew by Rebooted Mom

green chilis, olive oil, onion, coriander, cumin, garlic, russet potatoes, chicken stock, salt and pepper

– 3-4 green chiles (Hatch) or, poblano chiles, roasted, peeled and chopped
– 1 tbsp extra virgin olive oil
– 1 small onion, diced
– 1/2 tsp coriander
– 1/4 tsp cumin
– 2 cloves garlic, minced
– 3 large russet potatoes, peeled and chopped into 1 inch chunks
– 4 C. chicken stock
– salt & pepper, to taste
– Optional: sour cream & chopped cilantro
