– 1 pound boneless skinless chicken breast, cubed
– 16 oz box penne pasta
– 2 cups chicken stock (or water)
– 2 Roma tomatoes, diced
– 1/2 red onion, diced
– 1 cup mushrooms, diced
– 2 cloves garlic, minced (can use equivalent garlic powder if you prefer)
– 2 teaspoons Italian seasonings
– 1 cup low-fat part-skim mozzarella cheese, shredded
– 1/2 cup fat-free cream cheese
