Kedgeree by Every Nook & Cranny

– 2 salmon fillets, about 1-1.5 inches thick
– 1 lime zest and juice
– 1 tbsp oil
– 1 tbsp butter
– 1 smallonion, finely diced
– 1 cupwhite basmati rice (250 ml sized cup)
– 1 tsp turmeric
– 1 tspground cumin
– 1 tspground coriander
– 1.25 cups water
– 3 large fridge cold eggs (they must be fridge cold or they will overcook)
– 1-2 tbsp fish sauce (nam pla)
– 1-2 tbsp chopped coriander (optional)
