– 2 bell peppers diced
– 1 15 oz can diced tomatoes
– 4 C. vegetable broth
– 1 can water (use the can from the tomatoes)
– 1 C. brown or green lentils, dry
– 1 15 oz can pinto beans (or, use your own cooked beans (‘
– 3 tsp chili powder
– 2 tsp cumin
– 1 1/2 tsp oregano
– 1/3 C. quinoa, uncooked & rinsed
– 1 can 8 oz tomato sauce
– 1 1/2 tsp sea salt or, to taste
– 1/2 tsp black pepper
