Lobster Risotto by The View from Great Island

lobster tails, butter, olive oil, shallot, leeks, garlic, arborio rice, brandy, fish stock, mascarpone cheese, salt and fresh cracked pepper, thyme leaves or snipped chives

– 2 lobster tails (about 4 ounces, more or less)
– 1 tbsp butter
– 1 tbsp extra virgin olive oil
– 1 large shallot (peeled andminced)
– 1 leek (sliced and rinsed well)
– 3 cloves garlic, minced
– 1 cup arborio rice (be sure to get Arborio rice)
– 1/2 cup brandy
– 2 cups fish stock
– 3 tbsp mascarpone cheese
– salt and fresh cracked pepper to taste
– fresh thyme leaves or snipped chives for garnish
– 1 stick (1/2 cup butter, salted or unsalted)
