– 1 C diced carrot
– 1/2 C diced celery
– 3/4 C diced sweet onion
– 20-25 mini meatballs (frozen)
– 1 1/2 C ditalini pasta (or other small soup pasta)
– 40 oz vegetable stock or broth
– 1 tsp salt
– 1/2 tsp black pepper (freshly cracked)
– 2 T diced parsley (fresh)
– 2 T diced scallions
