– 1 large carrot, peeled and diced
– 3 cloves garlic, crushed
– 1 teaspoon dried Italian Seasoning
– 1/2 teaspoon Diamond Crystal kosher salt
– 1/4 teaspoon crushed red pepper flakes
– 1/2 cup red wine (or broth or water)
– 1 cup chicken broth, preferably homemade, or water
– 1 (28-ounce) can crushed tomatoes
– 1 teaspoon fresh ground black pepper
– More grated pecorino Romano cheese
