Mexican Casserole by My Plant-Based Family

brown rice, dry beans, water, tomato paste, garlic, onion powder, chili powder, sea salt

– 2 cups uncooked brown rice
– 1 cup uncooked dry beans
– 5 cups water
– 1 6 oz can of tomato paste (or 1 8 oz can tomato sauce with slightly less water)
– 1 tsp garlic
– 2 tsp onion powder
– 2 tsp chili powder
– 1 tsp sea salt (optional)
