– 1 medium sized onion, chopped
– 1 tablespoonminced garlic
– 1 bell pepper, diced
– 1 and 1/2 teaspoons powdered cumin
– 1 teaspoon crushed red pepper flakes
– 1 teaspoon smoked paprika
– 2 teaspoons dried oregano
– 1 cup basmati rice
– 1 and 1/2 teaspoons salt or to taste
– 1/2 cup canned tomato sauce
– 3/4 cup frozen corn
– 1/2 cup frozen peas
– 1/2 cup black beans drained
– 2 to 3 tablespoons fresh lime juice
– 2 tablespoons chopped cilantro
– Tortilla chips and salsa to serve (optional)
