– 3 cloves garlic, minced
– 1 rib celery (chopped)
– 1 small onion (sliced)
– A dash sherry wine
– A pinchdried oregano
– A pinch dried basil
– Kosher salt and black pepper to taste
– Olive oil
– 1 cup (250 ml) unsalted chicken stock
– 5.5 fl oz can (156 ml) tomato paste
– 2 tablespoons (30 ml) regular soy sauce
– 1 tablespoon (15 ml) fish sauce
– 1 tablespoon (15 ml) Worcestershire sauce
– 2 cups (500 ml) cold water
