Paella by Every Nook & Cranny

ring of chorizo, red onion, roasted red or yellow pepper, chicken or vegetable stock, saffron, parsely, sweet corn, peas, chicken thighs, tiger prawns, lemon


– 1/2 ring of chorizo, sliced
– 1 small red onion, roughly chopped
– 150 g risotto rice (or paella rice such as bomba)
– 1 roasted red or yellow pepper, chopped
– 275 ml chicken or vegetable stock
– Fat pinchsaffron threads
– 1 tbsp chopped parsley
– 1 small cansweetcorn (about 200 g)
– 100 g frozen peas
– 1-2 cooked chicken thighs, meat shredded (optional)
– 100-200 g frozen tiger prawns (shells off)
– 1 lemon, quartered
