– 2 tbsp dijon mustard
– 2 tbsp lemon juice
– 2 tsp dried tarragon
– 1 3/4 pound russet potatoes (about 4 medium potatoes)
– 1/4 cup half and half or cream
– Cornstarch and water
– Salt and pepper
