Ragu Bolognese by Jo’s Kitchen Larder

carrots, celery, onion, bay leaf, mixed herbs, sea salt, pepper, oil, lean beefMce, unsmoked or smoked pancetta streaky bacon, red wine, tomatoes, milk, leftover parmesan rinds for added flavour

– 300 g carrots
– 300 g celery stalks
– 300 g onions
– 3 bay leaves
– 1 heaped tsp mixed herbs
– 1 tsp sea salt
– Pepper
– Oil
– 1 kg lean beef mince
– 250 g unsmoked or smoked pancetta/streaky bacon (already diced or in one big chunk)
– some red wine (optional)
– 2 tins chopped tomatoes
– 2 half tins of water to wash out the tins
– 200 ml milk
– 1 tsp sea salt
– pepper
– 2 leftover parmesan rinds for added flavour (optional)
