Ropa Vieja by West of the Loop

cooking oil, sirloin tip roast, white onion, red and yellow peppers, garlic, cumin, oregano, paprika, turmeric, white wine, tomatoes, capers, golden raisins, juice of limes, salt and pepper, cilantro


– 3 TB neutral cooking oil such as canola or grapeseed
– 3 lb. Sirloin Tip Roast, cut into 2-inch pieces
– 1 white onion, diced
– 3 mixed red and yellow peppers, cut into thin strips
– 5 cloves garlic, minced
– 1 TB cumin
– 1 TB oregano
– 2 tsp. paprika
– 1 tsp turmeric
– 3/4 cup white wine
– 1 28 oz can crushed tomatoes
– 1/4 cup capers, drained
– 1/2 cup golden raisins
– Juice of two limes
– Salt and pepper to taste
– Cilantro
