– 5 cups (1250 ml) cold water
– 1 cup (250 ml) Shaoxing wine
– 1 cup (250 ml) regular soy sauce
– 1 cup (250 ml) dark soy sauce
– 6 – 8 (5.5 g – 7.5 g) star anise
– 6 (6 g) black cardamom pod (crushed)
– 2 (15 g) Chinese cinnamon sticks (crushed)
– 4 (13 g) garlic cloves (crushed)
– 1 tablespoon (15 g) ginger (sliced)
– 1 stick (80 g) brown sugar in piece (or substitute with 2 tablespoons (30 g) brown sugar)
– 1 – 2 teaspoons (2.5-5 g) Sichuan peppercorn (Optional)
