– 1 Cup quinoa
– 1 Small onion, diced
– 3 Cloves ofminced garlic
– 2 Eggs
– 2 tsp Italian seasoning mix or 1/2 tsp of dried parsley (oregano, basil and sage)
– 1 C Beef or Chicken or Vegetable Broth
– 1 C EVOO
– Pinches of sea salt and black pepper
– 1/4 Cup of Parmesan cheese (optional)
