– 1/3 cup part skim ricotta cheese
– 1/4 cup grated parmesan cheese

– pinch of ground black pepper
– 2/3 cup sun-dried tomato pesto (can substitute regular pesto)
– 1 cup fresh spinach leaves
– For the Tomato Basil Sauce:
– 2 pints cherry tomatoes
– 1 tablespoon butter
– pinch of kosher salt
– 1/4 cup fresh basil, torn
