– 1 19 oz can kidney beans
– 1 15 oz can fire-roasted diced tomatoes
– 1/2 cup long-grain white rice (rinsed for about 1 M)
– 1 teaspoon dried basil
– 1 teaspoon dried parsley
– 1/2 teaspoon oregano
– 1/2 teaspoon onion powder
– 1 teaspoon apple cider vinegar or lemon juice
– Salt and pepper (to taste)
– fresh parsley, chopped
