Stuffed Peppers by Chattavore

couscous, water, chickpeas, zucchini, corn, smoked paprika, smoked gouda, salt and black pepper, bell pepper


– 1/2 cup couscous
– 1 cup water (divided)
– 1 can chickpeas, drained and rinsed
– 1 small zucchini, diced
– 1/2 cup frozen or fresh corn
– 1/4 teaspoon smoked paprika (optional)
– 4 ounces smoked Gouda, grated (about 1 cup grated)
– salt and black pepper, to taste
– 3 large bell peppers (red, yellow, and/or orange)
