– 1 tablespoon cooking fat
– 8 chicken thighs, deboned
– 1/2 red onion, chopped
– 1 mango, cut into 1/2 inch chunks
– 4 cloves garlic, chopped
– juice of 1 lime (about 2 tablespoons )
– 1/4 cup + 1 tablespoon coconut aminos, divided
– 1-1? piece of ginger, chopped fine
– 1/4 cup chopped cilantro
– 2 tablespoons honey
– 1/2 cup chicken broth (bone broth, if you have it)
– 1 teaspoon fish sauce
– 2 tablespoons apple cider vinegar, divided
– 1/2 teaspoon salt
– 1 green onion, sliced (green part only)
