– 1 medium spaghetti squash (about 2 pounds)
– 1 cup water
– 1 tablespoon olive oil
– 1 pound ground chicken, turkey or beef
– 1 small onion, diced
– 1 (1.25-ounce) package taco seasoning
– 1 (10-ounce can) mild diced tomatoes with green chiles
– 1 tablespoon tomato paste
– 1 cup shredded Mexican cheese
– 1 Roma tomato, diced
– chopped cilantro, for serving
