– 1 cup finely chopped onion
– 1 cup finely chopped green bell pepper
– 1 cup finely chopped celery
– 3 garlic cloves, minced
– 1 tbsp tomato paste
– 2 tsp smoked paprika
– 1 tsp dried thyme
– Pinch cayenne
– 1/4 tsp liquid smoke (optional)
– Salt, black pepper to taste
– 3 cups water or veggie broth (comes out great with Better Than Bouillon vegetable base
– 2 tbsp grapeseed oil or avocado oil or more veggie broth/water, for sauteing in step 2
– 1/4 cup chopped cilantro
– hot sauce, to taste
– OR a squeeze of lemon juice for each bowl
